Ok, we might have to wait a while before insects become part of traditional dishes served at holiday season. But it is now possible❗ In recent years, the European Commission has authorised 3 insects on the food market: yellow mealworm larva, migratory locusts and house crickets. But only after a #SafetyAssessment performed by the European Food Safety Authority. So yes, those insects are safe to eat! Next Christmas maybe?🎄

Looking forward to a good #roast for #EndOfYear celebrations? We can already smell it 🍗 😋 But pay attention not to put the oven temperature too high and not to eat any burnt parts! That is to limit your exposure to #acrylamide, a suspected #carcinogen that forms naturally in various cooking processes, including baking, frying and roasting.

❓ What are the effects of acrylamide ingestion? How does it form? How to limit its formation? Those are research questions that scientists are working on to better understand the substance and, eventually, better protect all citizens against its potential harmfulness.
